What is Water Kefir?

During fermentation, beneficial bacteria and yeast transform the sugars into a refreshing, probiotic-rich beverage that’s naturally low in sugar and full of flavour.

I bought through their Etsy store and these water kefir grains are AMAZING, a few months in I'm making 2 x 750ml bottles every 48 hours. After the second ferment they are explosive!!! After experimenting with types of sugar and ratios, here's what works for these grains 100g of grains plus 100g sugar (66g white sugar, and 34g unrefined demerera cane sugar) in 1500 ml of spring water with 2 dried figs. With that mix my grains are more than doubling every 48 hours. Tried lots of flavours for the 2nd ferment but IKEA's blueberry cordial tops my list so far.
